
Dipping sauces are SO quick and easy to make and these recipes are definitely ones to save for later. Combine them with the heady smokiness of barbecued prawns or meltingly tender fillet beef, and you have yourself a meal absolutely fit for a king.
We had some friends round on New Year’s Eve and had a wonderful yet simple spread of whole king prawns, ‘Tomahawk’ steak, dipping sauces, crisp fresh salad & roasted salad potatoes. All topped with a fine dose of laughter under the flickering candlelight. Absolute bliss.
These dipping sauces are definitely worth pinning for later and if I was cooking prawns and only had the time to make one of the dipping sauces, I’d make the Sweet Chilli Sauce. If it was just steak, I’d make the Weeping Tiger Dipping Sauce…
So, from left to right of the feature photograph…
Weeping Tiger Dipping Sauce
Tangy, spicy and punchy…
- 3 Tbsp fish sauce
- 3 Tbsp fresh lime juice
- 1 Tbsp caster sugar
- 1 Shallot, finely chopped
- 1 Tsp dried chilli flakes
- 1 Green chilli, finely chopped (deseeded if you prefer less heat)
* Mix ingredients together and set aside for the flavours to develop
Asian Dipping Sauce
Light & fresh…
- 125g / 4 oz demerara sugar
- 50ml / 2 fl oz water
- 2 Cloves garlic, finely chopped
- 2 Tbsp fresh coriander, finely chopped
- 3 Tbsp Rice Wine Vinegar
- 1 Tbsp Soy Sauce
- 1 Tbsp, fish sauce
- 1.5 Tbsp Fresh Lime juice
- 1 Spring onion, finely chopped
*Bring the water & sugar to the boil, shaking the pan and until it goes syrupy.
*Cool slightly and then add the other ingredients, except the coriander & spring onions. Add when cool
Sweet Chilli Dipping Sauce
Beautifully sticky, spicy and intense…
- 2 red chillis, deseeded
- 3 Cloves garlic, finely chopped
- 1 Tbsp white sugar
- 2 Tbsp Olive oil
- 2 Tbsp Soy Sauce
- 2 Tbsp Coriander, finely chopped
- 2 Tbsp Spring Onion, finely chopped
- Lime juice, to taste
*Blend the chilli, garlic and sugar into a paste.
*Heat the oil and gently sizzle the paste for a couple of minutes,
*Add the soy sauce and leave to cool
*Add the coriander, spring onion and the lime juice.
Absolutely divine!

I’m totally with you – Asian dipping sauces are the best. And perfect for entertaining as they have so much flavour that the meat/seafood or whatever can just be grilled. I love the weeping tiger one but I have never tried making my own sweet chilli sauce – will definitely try out your recipe. Sounds delicious.
