
So this is the emergency free-from pasta recipe I make when I’ve messed up and have nothing to give anyone for tea. Either I’ve forgotten to thaw something out or I’ve just plain forgotten that we need to eat at all!
I made this tonight because the Bolognese that started, smelt of old BO and I just couldn’t bring myself to serve it up. Really don’t know what happened. I blame the kids.
We have various food intolerances in our family and as we all eat together, I cook meals that are gluten, dairy, egg & garlic free.
I have these items all the time as a back up, for those days we all have…
- Pasta (gluten free)
- Butter Beans (tinned)
- Frozen peas
- Soya cream alternative (we’re dairy free)
- Onions / shallots / celery / green peppers – either, all, of whatever I have.
- Lemons
- +/- Frozen prawns
- Frozen Peas
- Frozen chopped spinach
- Herbs, spices etc
We all love it, it takes 14 mins to cook from start to finish and it gets the veggies in.
So – cook the pasta
- And while that’s cooking, frizzle finely chopped onions / celery / pepper (or whatever you’re using) + garlic if you can eat it!
- Add the soya cream (or real if you prefer).
- Add everything else you would like to.
- Simmer and serve!
