
I keep forgetting to make these Chicken Fajitas but it’s such a quick meal to make and the kids LOVE the whole wrapping thing.
What you need for 4 people:
- 3 x chicken breasts or 2-3 beef tails or ‘some’ prawns or ‘some’ fish or anything else you fancy – cut into strips
- Peppers (green x 2 & red x 2) – sliced by the kids
- Onions x 2 – sliced
- 1-2 tsp ground cumin
- 1-2 tsp paprika
- 1-2 tsp oregano
- +/- chilli powder (to taste) or we prefer to use Tabasco Jalapeno Sauce
- 1 clove minced or crushed garlic (though we need to avoid this so don’t add)
- 2-3 tbsp of oil (I use rice bran oil as it has a high smoking point and it’s meant to be good for you).
- Tortilla wraps (we use Warburton’s gluten free wraps as we need to avoid gluten, dairy & egg)
- +/- guacamole, salsa, grated cheese, refried beans, coriander, jalapenos, sour cream etc for serving
What you need to do:
- Mix the spices together
- Heat the oil in the pan – medium to high
- Add the spices
- Frizzle the veggies for a couple of minutes
- Frizzle the meat / fish until it’s cooked through
- Serve your Chicken Fajitas in wraps with salsa, gaucamole, cheese or whatever else.
