
A curry with peaches in wasn’t the first thing I’d have thought of and I had to think twice before committing to making it, BUT it does work really well. This peach & chickpea curry is one of Jack Monroe’s recipes from her recipe book ‘A Girl Called Jack: 100 budget recipes.’
Do try it. Peach & chickpea curry freezes really well and it’s really affordable.
What You Need:
For 2 people:
- 1 x tin of chickpeas (250g) rinsed thoroughly.
- 1 x tin of chopped tomatoes (400g)
- 1 x tin of peaches in fruit juice (drained but keep the juice) (400g)
- Splash of Olive oil
- 1 Tsp Ground Cumin
- 1 vegetable stock cube
- 1 Onion (chopped)
- 1 clove of garlic (finely chopped)
- 1 chilli (optional)
- Handful of fresh coriander
You can also add chopped cooked meat or any other vegetables you have lying around in your fridge!
What You Do:
- Gently frizzle the onion, garlic and chilli in the oil until soft. Make sure you don’t brown the onions or it will change the flavour!
- Add everything else plus as much of the peach juice as would would like to give the desired consistency.
- Simmer for 30 minutes.
- Serve the peach & chickpea curry with rice.
*Jack suggests boiling the chickpeas vigorously for 10 minutes in fresh water to remove any toxins, before popping them in the curry at the end of the cooking time.

Loving the sound of this, I’d never consider peach in a curry or with chickpeas but this looks delicious and I’m a fan of a Girl Called Jack x

I too would have never thought to use peaches in a curry. It doesn’t sound like it goes but I’d love to try it to see how it goes. It’s great that it freezes too.
