
These Thai Mince Lettuce Wraps taste so so fresh and the kids devour them. It’s that ‘wraps’ thing again I think. Totally ‘Free-From!’
Serves 6 (any leftovers freeze really well)…
What you need:
- 1kg minced beef or chicken
- 3 red onions
- 3 tbsp olive oil
- 25-40ml thai fish sauce (to taste)
- 75g pack of frozen Thai Mix (Waitrose’s Cooks Ingredients frozen fresh herbs)
(OR 2 lemongrass, 3 cloves of garlic, 2 red chillis all finely chopped) - Big handful of fresh coriander, chopped
- Zest and juice of 3 limes
To serve:
- Gem lettuce
- Plain rice
- Cucumber matchsticks
- Wedges of lime
What you do:
- Heat the oil and frizzle the red onion and the Thai Mix
(or the lemongrass, garlic and chillis) - Add the mince and brown it.
- Add the lime zest and fish sauce – simmer gently for a couple of minutes until just cooked through
- Take off the heat and stir through the fresh coriander and the lime juice.
- Take a piece of lettuce, add a couple of cucumber matchsticks, rice and the mince. Add a squeeze of lime juice over the top if you like and eat! Absolutely delicious and so juicy!

They do a full range of fresh frozen herbs thankfully! It saves so much time. I have to do a bespoke mix for the little one as he needs to avoid garlic but that’s easy enough! Thanks x
