
I saw an amazing recipe for Oaty Banana Bread over on Natural Health Star by Vaani Wadman and adapted it to be Vegan & Gluten Free to suit our food intolerances. I love the use of maple syrup as the injection of sweetness. The result is so wonderful and not in the least bit ‘Free From!’ Think warm, homely and hits the spot. The kids grin from ear to ear when I take a parcel of warm Oaty Banana Bread to school with me when I pick them up!
What You Need:
1 x 2lb loaf tin (lightly greased and base lined)
2 ripe bananas (sliced or mashed)
60g rice bran oil
150g organic gluten free self-raising flour
125g pure maple syrup
30g organic gluten free oats
1/4 cup of apple sauce / puree OR 1 large egg if you prefer
½ tsp vanilla extract
½ tsp bicarbonate soda
½ tsp baking powder
What You Do:
- Preheat the oven to 180 degC.
- In a bowl, whisk together the oil, apple sauce, vanilla extract and maple syrup.
- Add the rest of the ingredients and fold them in gently.
- Pour the batter into the lined tin. (Top with more slices of banana and sprinkles of oats if you wish). I don’t bother as I’m rather on the lazy side!
- Bake for 35-40 minutes or until golden. You can use a cake skewer for testing. If the skewer comes out clean, then the loaf is cooked.
- When cooked, allow the oaty banana loaf to cool slightly in the tin. Then transfer to a cooling rack to cool completely.
- Devour all in one go while still warm!
This Oaty Banana Bread will also store in an airtight container for up to a week and I imagine freeze very well too.
