These really are the most incredible sticky BBQ ribs. I’ve only slightly adapted a recipe by Felicity Cloake, as her recipe includes marmite, which is officially not really gluten free because it’s derived from brewer’s yeast. I’ve included the link about marmite and gluten free diets at the bottom of this post if you’d like to read up on it a bit more.
Anyway – this is so quick and easy. I make and marinade the ribs the night before, leave them in the fridge overnight and then put them in the oven on timer in the morning to be ready for the family at about 5:30pm.
I can’t tell you how much the kids love these. The big kids have a rack each and they’re just 8 and 6 years old.
What You Need:
(for 4 incredibly greedy people who like a rack each):
- 4 racks of baby back / loin ribs
- 2 tbsp (Marmite) or, for the gluten free option I use ‘Essential Yeast Extract’ – see below
- 2 tbsp English mustard (we use Atkins and Potts’ Hot English Mustard)
- 3 tsp smoked paprika
- 4 tbsp tomato ketchup
- 5 tbsp dark muscovado sugar (you have to turn a blind eye to this)
What You Do:
- Mix all the ingredients of the marinade together.
- Rub half of the mixture all over the ribs.
- Cover and place in the fridge overnight or for 4+ hours.
I just put them in the roasting dish I’m going to cook them in but a bag would be fine too. - Place them tightly covered into the oven at 150 degrees for 2.5 hours.
- Heat a griddle to hot, baste the racks with the remaining marinade and griddle until charred and caramelised.
- Serve immediately
We love ours with Apple & Fennel Slaw and baked potato wedges!
This marinade would definitely work really well with chicken too, so get bastin’ and cookin’!

I’m making them tomorrow. I’m racking my brain as to what vegetarian food the marinade would work well with. Also, I’ve no smoked paprika so am using regular paprika instead. Fingers crossed it won’t blow the kids’ heads off.
