
Our 8 year old was very proud of herself when she managed to rustle up this Asian Spinach by Judy Joo. She declared it to be ‘DELICIOUS’ and she’s not usually a massive fan of spinach. This is a vegan recipe too if that’s helpful….
What you need:
1 lb. spinach, washed
2 Tbs. Asian sesame oil
1 Tbs. Soy sauce (we use gluten free)
1 tsp. untoasted white sesame seeds
1 tsp. plain rice vinegar
1 tsp. granulated sugar
1/2 tsp. minced garlic
1/2 tsp. freshly ground black pepper
- Plunge the spinach into plenty of boiling water until it goes bright green (about 10 seconds).
- Drain and rinse under plenty of cold water (or plunge into icy water) to stop it cooking further.
- Squeeze as much water out of it as possible and loosen it as you put it into a bowl.
- Mix all the other ingredients together and then mix it up with the spinach.
Ideally leave it for an hour for the flavours to develop.
Gobble it up as quickly as you can before everyone else eats it.

It’s a pleasure and it really is so delicious. I try and put spinach in everything because my lot aren’t so keen on leafy greens (weirdos) so I have to hide it usually – until this recipe. Children make no sense…!

Utterly gorgeous (I actually want this right this instant so am grumpy reading this 😉 ).. I follow my Mum’s Greek recipe using these longer, thinner spinach leaves (we can only find them in continental supermarkets and sometime Waitrose) with olive oil, fresh lemon and a little sea salt.
