
Apple & Fennel Slaw is good with everything. Apart from gravy.
I absolutely LOVE slaws and I’ve had to branch out a bit once I found out I feel much better if I avoid egg (and hence mayo). I found this amazingly fresh vegan Apple & Fennel Slaw recipe by David Page, Barbara Shinn from Fine Cooking. It appears to go with everything!
What you need:
- 2 Tbsp fresh lemon juice
- 3 tart apples
- 2 small heads fennel, cut into matchsticks
- 1 small red onion, cut in half and very thinly sliced
- 1/4 cup extra-virgin olive oil
- 2 Tbs. chopped fresh flat-leaf parsley
- Salt and freshly ground pepper to taste
What you do:
- Put the lemon juice in a large bowl.
- Cut one apple in half, core it and then julienne it using a Julienne Peeler and mix it with the lemon juice to stop it going brown. Repeat with the other apples.
- Toss in all the other ingredients and let it stand for at least 20 minutes at room temperature before serving.
- Fight the kids for the last spoonful of Apple & Fennel Slaw.

It’s so fresh and quick but be careful with the julienne ‘thingy’ – I usually end up with a scrape or two out of my hand 😉

It really is but be careful with the julienne thingy – it will grate your hand given half a chance 😉
I’m also a huge fan of slaws, especially the non-non-sickly creamy ones. I make my own with crisp slivers of crunchy veg, a lot of fresh herbs and a good balance of sugar and vinegar. This one looks yummy, and crucially, healthy!
