Seriously. You must try this:
Chicken (or fish) & Rice – Gluten & Dairy Free isn’t very photogenic but it’s amazing! For some reason the rice looks overcooked here but it wasn’t. I blame my iphone!
It’s an Ottolenghi dish that we eat as a main meal and works well with either chicken or your favourite fish. The kids (and my husband) literally cheer when they hear this is what we’re having!
Don’t be put off by the ingredients. If you buy the Waitrose frozen herbs it takes about 15 minutes to put this together.
Serves 4
What you need:
- Cooked chicken (one whole medium chicken / 3-4 breasts) or 4 fillets of fish
- 65 mls fresh lemon juice
- 35 mls olive oil
- 30 mls Thai fish sauce (nam pla)
- 30 mls Toasted Sesame Oil
- 50g Fresh chopped coriander (I use Waitrose’s Cook Ingredients frozen chopped coriander)
- 20g Fresh chopped mint (fresh frozen from Waitrose again)
- 300g Rice (basmati or any mix or brown, wild, basmati) – cooked
- Couple of onions – sautéed until soft.
What you do:
- Mix everything together apart from the rice and chicken or fish
- Then add those and mix well. That’s it!

Hi Richard, I’ve used salmon and white fish but I’m not too sure that things like mackerel would work as well as it has quite a strong taste. But it might! If you like this one you might like the Thai Lettuce Wraps too….

Yum yum yum and yum! Pinning cos I need recipes with chicken cos I am eating a lot of it at the moment! Will be making this with buckwheat or quinoa instead of rice though (for the rest of the family)…perhaps some cauliflower ‘rice’ for me?! Great!
