Ok so this is a chunky mango salsa recipe but that’s because I forgot where I was and started ‘hedgehogging’ the mango for the kids to eat straight up. I totally forgot I was making mango salsa. As it turned out, mango salsa is just as lovely chunky as it is posh.
This is what you need:
- 2 large ripe mangoes (in small chunks).
- 2 large tomatoes deseeded (if you remember) and chopped.
- 1/2 red onion very finely chopped.
- Fresh coriander (finely chopped)
- Fresh lime juice (to taste but probably about 1/2-1 lime)
This is what you do:
- Hedgehog your mango like this and mix everything together:
We had our mango salsa with fried fish and potato wedges. With more mango salsa for pudding.

I love mango’s and it has surprised me how good they are with savoury dishes too! I used to hate fruit in salads or anything like that, but I can’t get enough now and it’s lovely and summery 🙂
