
Nutty Pasta (Gluten & Dairy Free) is also vegan and a quick every day type meal for us. I’ve fallen in love with the Cook’s Ingredients frozen herbs that Waitrose sells as I always feel so tight for time but I’m totally addicted to the taste of fresh herbs.
This makes a lot of sauce so either make a smaller batch, or do what I do and portion up the left overs and freeze them! I love having lots of sauce with pasta and it makes me feel better about having a better ratio of fresh veggies to carbs.
One of us has to avoid garlic so I tend to cook without it for ease but it would be delicious in this sauce so I’ve included it.
What you need:
(Serves 6 + a freezeable portion for a couple of kids)
- 3 Tins of chopped tomatoes (400g tins)
- 2 tbsp Tomato puree
- 1 very large onion or 2 medium ones, finely chopped
- 3 cloves of garlic finely chopped
- 30g fresh basil leaves (or more to taste), finely chopped
- 150g cashews – blitz’d up really small but not finely ground OR pine kernels if you can’t eat nuts
- Very big glug of olive oil
***quick tip: I use Waitrose’s Cook’s Ingredients frozen chopped basil for speed***

What you do:
- Gently frizzle the onion in the olive oil until softened
- Add the tinned tomatoes & the tomato puree
- Add the cashews
- Simmer for 5 mins
- (Taste and add 1-2 tsp sugar if you feel it’s too tart for your taste buds). I don’t.
- Add the fresh basil & serve with gluten free pasta!

Yes it is very quick and easy! You could always use a different nut if you don’t have cashews. So pleased you all enjoyed the fish tacos and thank you for coming back to tell me. I made them with chicken last week and they were just as delicious ;). They’d also work well with rice instead of wraps but then I guess they wouldn’t be tacos would they?? xxx

Love the recipe. As a died-in-the-wool Yank, it took me a bit to translate all your terms and measures, but I stuck with it. Love “frizzle the onion”…that’s been permanently added to my vocabulary as of today! I’d never really thought to use nuts to amp up the flavor of a pasta sauce, what a great idea! This has been added to my meal planner for this upcoming week.

Ooh I love the idea of sprinkling cashew nuts over pasta – it’s one of those things that now sounds so simple I don’t know why I’ve never tried it. Definitely trying it out next time I have pasta 🙂
