
I asked an Indian friend once if she could PLEASE put me out of my misery and give me the very basics of an every day veggie curry that I can ‘whip up’ without any planning or thinking. This is what she told me – and it’s delicious!
I’ve called it Anything You Want Curry because you can keep it vegetarian, add meat, fish or prawns, or put whatever you like in. This particular recipe is vegan…
ANYTHING YOU WANT CURRY
What you need:
- 1 tsp Mustard seeds
- 1 tsp Whole cumin seeds
- 1tsp Ground ginger
- 1tsp Turmeric\1 tsp Ground Coriander
- 2 cloves (or more if you love it) of crushed garlic (we have to avoid garlic though)
- Lots of fresh coriander (stems and leaves finely chopped)
- +/- chilli (fresh / flakes or ground)
- Tinned Tomatoes
- 1 x Onion – chopped
- Tinned beans (borlotti or butter or black or black eyed or kidney or a mix)
- Any other veg you happen to have – chopped (e.g. onion, carrot, courgette, spinach, celery…anything at all really)
- Approx. 160ml Coconut cream
- +/- prawns or fish or meat (I do just beans as I like to cook vegetarian food every week as well as meat and fish)
***An amazingly simple raita to have on the side is natural yoghurt + very finely diced apples (with peel on for the extra vitamins). The kids adore it and see it as pudding!***
What you do:
- Fry the mustard seeds and the whole cumin until they pop.
- Add chopped onions and any other veg and the other spices (and meat if you’re using it, to brown).
- Add tomatoes and the beans etc and simmer for 20 minutes.
- Add the coconut cream.
- Add the coriander.
Serve with rice.

We’re a rice intolerant family so would be interested to know if you had any suggestions what would work as an alternative here as curries are so specific with flavours to then add any side. 🙂
Hi Martyn, thank you so much for your lovely comments 🙂 How about nan bread, chipati or roti? I often miss out the rice myself and have a couple of side dishes instead, like spinach or chickpea based ones. An absolutely gorgeous raita to have on the side is at it’s simplest – natural yoghurt (or soya yoghurt if you’re us), with finely diced apple (keep the peel on) + fresh chopped coriander. The kids absolutely hoover it up. I must add this to this recipe actually!

Ooh I love a good curry. I tend to throw mine together with the various ground spices, but it does add something extra when you use the whole seeds and fresh coriander is so yummy. Love how you’ve named it too 🙂
I’m totally addicted to fresh coriander! The original name for this curry was ‘Indian-ish’ 🙂
